Prepare the berriesWash and hull the berries. If using strawberries, slice them into smaller pieces. Reserve about 1/2 cup of fresh berries for garnish.

Cook the berriesIn a medium saucepan, combine the berries, sugar, lemon juice, and vanilla extract. Bring to a simmer over medium heat, stirring occasionally until the berries start to release their juices and the sugar dissolves, about 5-7 minutes.

Thicken the puddingIn a small bowl, mix the potato starch or cornstarch with cold water until smooth. Slowly pour this mixture into the simmering berries while stirring constantly. Continue to cook for 2-3 minutes until the mixture thickens to a pudding-like consistency.

Add final touchesRemove from heat and stir in the butter and cardamom if using. Let the pudding cool slightly, stirring occasionally to prevent a skin from forming on top.

Chill and serveTransfer the pudding to a serving bowl or individual dessert cups. Cover with plastic wrap directly touching the surface to prevent skin formation. Refrigerate for at least 2 hours until completely chilled.

Garnish and enjoyBefore serving, top each portion with whipped cream, reserved fresh berries, and mint leaves. Serve cold as a refreshing dessert.
