
Swedish Cinnamon Rolls

Prepare the doughIn a large bowl, mix 4 cups flour, 1/4 cup sugar, salt, and cardamom (if using). In a separate bowl, dissolve yeast in warm milk and let sit for 5 minutes until foamy. Add melted butter and egg to the milk mixture, then pour into the flour mixture. Stir until a soft dough forms.

Knead the doughTurn dough onto a floured surface and knead for 8-10 minutes until smooth and elastic. Place in a greased bowl, cover with a clean kitchen towel, and let rise in a warm place for about 1 hour or until doubled in size.

Prepare the fillingWhile the dough rises, mix softened butter with sugar and cinnamon until well combined to create the filling. Set aside at room temperature.

Shape the rollsPunch down the risen dough and roll it out on a floured surface into a large rectangle, approximately 16x20 inches. Spread the cinnamon-sugar filling evenly over the dough, leaving a 1/2-inch border. Starting from the long edge, tightly roll the dough into a log.

Cut and arrangeUsing a sharp knife, cut the log into 12-15 pieces, each about 1 1/2 inches thick. Place the rolls in parchment-lined baking pans, leaving space between each roll. Cover and let rise for another 30-45 minutes until puffy.

Bake the rollsPreheat oven to 350°F (175°C). Brush the rolls with beaten egg and sprinkle with pearl sugar. Bake for 15-18 minutes until golden brown. The rolls should sound hollow when tapped on the bottom.

Cool and serveAllow the rolls to cool in the pan for 5 minutes, then transfer to a wire rack to cool slightly. Swedish cinnamon rolls are traditionally served slightly warm with coffee.
