
Apple and Berry Crumble

Prepare the fruitIn a large bowl, combine the sliced apples, mixed berries, granulated sugar, lemon juice, vanilla extract, cornstarch, and cinnamon. Gently toss until the fruit is evenly coated. Transfer the mixture to a 9x13 inch baking dish, spreading it out evenly.

Make the crumble toppingIn a separate bowl, mix together the flour, rolled oats, brown sugar, and salt. Add the cold cubed butter and use your fingertips to rub it into the dry ingredients until the mixture resembles coarse breadcrumbs with some pea-sized pieces of butter remaining.

Assemble the crumbleSprinkle the crumble topping evenly over the fruit mixture, making sure to cover all the fruit. Press down lightly to compact the topping slightly.

Bake the crumblePreheat the oven to 375°F (190°C). Place the baking dish on a rimmed baking sheet (to catch any bubbling juices) and bake for 35-40 minutes, or until the fruit is bubbling around the edges and the topping is golden brown and crisp.
