
Finnish Cardamom Buns

Prepare the doughIn a large bowl, dissolve the yeast in warm milk. Add sugar, cardamom, salt, eggs, and melted butter. Gradually mix in the flour until the dough comes together. It should be soft but not sticky.

Knead the doughTurn the dough onto a floured surface and knead for 8-10 minutes until smooth and elastic. Place in a greased bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour or until doubled in size.

Prepare the fillingWhile the dough is rising, mix brown sugar and cinnamon in a small bowl. Set aside.

Shape the bunsPunch down the dough and divide it into two equal portions. Roll each portion into a rectangle about 12x16 inches. Spread half of the softened butter over each rectangle and sprinkle with the cinnamon-sugar mixture. Roll each rectangle tightly from the long side, creating a log.

Cut and formUsing a sharp knife, cut each log into 6-8 slices. Place each slice, cut side up, on a parchment-lined baking sheet. Press down slightly with your palm. Cover and let rise for 30 minutes.

Bake the bunsPreheat oven to 375°F (190°C). Brush the buns with beaten egg and sprinkle with pearl sugar. Bake for 12-15 minutes until golden brown. Transfer to a wire rack to cool slightly before serving.
