Prepare the batterIn a large bowl, whisk together the flour, baking powder, sugar, salt, and cardamom. In a separate bowl, whisk together the egg yolks, buttermilk, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined.

Whip the egg whitesIn a clean bowl, beat the egg whites with an electric mixer until stiff peaks form. Gently fold the whipped egg whites into the batter until just incorporated. If using, fold in the diced apple.

Heat the aebleskiver panPlace an aebleskiver pan over medium heat. When hot, add a small amount of butter to each well. If you don't have an aebleskiver pan, you can use a cake pop maker or a special round pancake mold.

Cook the aebleskiverFill each well about 3/4 full with batter. Cook for about 2 minutes until bubbles form on the surface and the edges begin to set. Using a knitting needle, wooden skewer, or fork, carefully flip each aebleskiver to cook the other side. Continue rotating the aebleskiver to ensure they cook evenly and form a round shape.

Finish cookingContinue cooking, rotating occasionally, until the aebleskiver are golden brown and cooked through, about 3-4 minutes total. Transfer to a serving plate and repeat with the remaining batter.

ServeDust the aebleskiver with powdered sugar and serve warm with jam or maple syrup on the side. Traditionally, they are served with raspberry or strawberry jam.
