  1. Prepare the gelatin
    In a small bowl, sprinkle the gelatin over the cold water and let stand for 5 minutes until softened and slightly translucent. This process is called blooming and ensures the gelatin dissolves smoothly.
  2. Heat the dairy mixture
    In a medium saucepan, combine the heavy cream, milk, sugar, salt, vanilla bean seeds, and the emptied vanilla bean pod. Heat over medium heat, stirring occasionally, until the mixture just begins to simmer (do not boil). Remove from heat and discard the vanilla bean pod.
  3. Incorporate the gelatin
    Add the softened gelatin mixture and vanilla extract to the hot cream mixture, stirring continuously until the gelatin is completely dissolved, about 2 minutes. Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl with a pour spout.
  4. Fill molds and chill
    Divide the mixture evenly among six 6-ounce ramekins, custard cups, or decorative glasses. Cover with plastic wrap and refrigerate until set, at least 4 hours or preferably overnight.
  5. Unmold and serve
    To serve, run a thin knife around the edge of each mold and dip the bottom of each mold in hot water for 10 seconds. Invert onto serving plates and gently shake to release. Alternatively, serve directly in the glasses. Top with fresh berries, drizzle with honey, and garnish with mint leaves.
