Saba Misoni
Savory miso-braised mackerel, a Japanese home-cooking staple
Ingredients
Instructions
-
Prepare the mackerelRinse the mackerel fillets under cold water and pat dry with paper towels. Cut each fillet into 2-3 pieces for easier cooking and serving. If using whole mackerel, ask your fishmonger to clean and fillet it for you.
-
Sear the fishHeat vegetable oil in a large skillet over medium-high heat. Place the mackerel pieces skin-side down and sear for about 2 minutes until the skin is slightly crispy. Flip and cook for another minute.
-
Prepare the miso sauceIn a small bowl, mix together the miso paste, sugar, mirin, sake, water, and soy sauce until well combined. The miso should be completely dissolved in the liquid.
-
Simmer the fishPour the miso mixture over the fish in the skillet. Add the sliced ginger. Reduce heat to low, cover, and simmer for about 10-12 minutes. Occasionally spoon the sauce over the fish.
-
Reduce the sauceRemove the lid and continue to cook for an additional 3-5 minutes until the sauce has thickened slightly. Be careful not to let the sauce burn as miso can scorch easily.
-
ServeCarefully transfer the mackerel to serving plates. Spoon the thickened sauce over the fish and garnish with sliced green onions. Serve hot with steamed rice and a side of vegetables.
