  1. Prepare the mackerel
    Rinse the mackerel fillets under cold water and pat dry with paper towels. Cut each fillet into 2-3 pieces for easier cooking and serving. If using whole mackerel, ask your fishmonger to clean and fillet it for you.
  2. Sear the fish
    Heat vegetable oil in a large skillet over medium-high heat. Place the mackerel pieces skin-side down and sear for about 2 minutes until the skin is slightly crispy. Flip and cook for another minute.
  3. Prepare the miso sauce
    In a small bowl, mix together the miso paste, sugar, mirin, sake, water, and soy sauce until well combined. The miso should be completely dissolved in the liquid.
  4. Simmer the fish
    Pour the miso mixture over the fish in the skillet. Add the sliced ginger. Reduce heat to low, cover, and simmer for about 10-12 minutes. Occasionally spoon the sauce over the fish.
  5. Reduce the sauce
    Remove the lid and continue to cook for an additional 3-5 minutes until the sauce has thickened slightly. Be careful not to let the sauce burn as miso can scorch easily.
  6. Serve
    Carefully transfer the mackerel to serving plates. Spoon the thickened sauce over the fish and garnish with sliced green onions. Serve hot with steamed rice and a side of vegetables.
