
Fish Curry
Tender fish fillets in a rich, aromatic curry sauce

Marinate the fishIn a bowl, mix the fish pieces with lemon juice and 1/2 teaspoon turmeric powder. Let it marinate for 15 minutes while you prepare the curry base.

Prepare the curry baseHeat oil in a large pan over medium heat. Add the chopped onions and sauté until golden brown, about 5-6 minutes. Add ginger paste and garlic paste, and cook for another 2 minutes until fragrant.

Add spices and tomatoesAdd the remaining 1/2 teaspoon turmeric, coriander powder, cumin powder, and red chili powder. Stir for 30 seconds until fragrant. Add the diced tomatoes and cook until they soften and oil begins to separate, about 5 minutes.

Create the curry saucePour in the coconut milk and 1/2 cup of water. Add the curry leaves and green chilies. Bring to a gentle simmer and let it cook for 5 minutes to allow the flavors to meld together. Season with salt to taste.

Cook the fishGently slide the marinated fish pieces into the simmering curry sauce. Cover and cook on low heat for 8-10 minutes, or until the fish is cooked through and flakes easily with a fork. Avoid stirring too much to prevent breaking the fish pieces.

Finish and serveOnce the fish is cooked, turn off the heat. Garnish with fresh cilantro leaves. Serve hot with steamed rice or bread for a complete meal.
