Prepare the sweet potatoesPeel the sweet potatoes and cut them into 1-inch cubes of roughly equal size to ensure even cooking. Place them in a large mixing bowl.

Season the potatoesIn a small bowl, mix together the olive oil, maple syrup, cinnamon, smoked paprika, salt, pepper, garlic powder, and dried thyme. Pour this mixture over the sweet potatoes and toss until all pieces are evenly coated.

Arrange for roastingSpread the seasoned sweet potatoes in a single layer on the prepared baking sheet, making sure they're not overcrowded. This allows them to roast properly rather than steam.

Roast the sweet potatoesPlace the baking sheet in the preheated oven and roast for 25 minutes. Then remove from the oven, flip the sweet potatoes with a spatula, and return to the oven for an additional 10 minutes or until the edges are crispy and caramelized and the centers are tender when pierced with a fork.
