
Ramen with Soft-Boiled Egg

Prepare the soft-boiled eggsBring a medium pot of water to a boil. Gently lower the eggs into the boiling water and cook for exactly 6 minutes for a jammy yolk. Immediately transfer eggs to an ice bath to stop cooking. Once cool, carefully peel and set aside.

Create the broth baseIn a large pot, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant, about 1 minute. Pour in the chicken broth or dashi stock, soy sauce, mirin, and sake if using. Bring to a simmer and let it cook for 10 minutes to develop flavor.

Cook the noodlesIn a separate pot, cook the ramen noodles according to package instructions until al dente, usually 2-3 minutes. Drain well and set aside. Do not overcook as they will continue to soften in the hot broth.

Prepare the vegetablesWhile the broth simmers, sauté mushrooms in a small pan with a touch of oil until they release their moisture and begin to brown, about 3-4 minutes. In the last minute of cooking the broth, add the spinach and stir until just wilted.

Assemble the ramen bowlsDivide the cooked noodles among four large serving bowls. Ladle the hot broth over the noodles. Arrange the sautéed mushrooms, bamboo shoots, and sliced green onions on top. Cut each soft-boiled egg in half and place on top of each bowl.

Garnish and serveAdd nori strips as garnish. Serve immediately while hot, allowing diners to mix the ingredients into the broth as they eat. Provide additional soy sauce or chili oil on the side for those who want to adjust the seasoning.
