  1. Brown the pork
    Heat vegetable oil in a large pot over medium-high heat. Working in batches, brown the pork cubes on all sides, about 3-4 minutes per batch. Transfer browned pork to a plate and set aside.
  2. Sauté aromatics
    In the same pot, add diced onions and sauté until translucent, about 3 minutes. Add minced garlic and cook until fragrant, about 1 minute more, being careful not to burn the garlic.
  3. Simmer the stew base
    Return the browned pork to the pot. Add tomato sauce, chicken broth, bay leaves, fish sauce, and sugar. Stir to combine. Bring to a boil, then reduce heat to low. Cover and simmer for 45 minutes, or until the pork is tender.
  4. Add vegetables
    Add the potatoes and carrots to the pot. Continue to simmer for 15 minutes. Then add the bell peppers and cook for an additional 5 minutes.
  5. Finish the dish
    Stir in the green peas and cook for 3-5 minutes more until peas are heated through. Season with salt and pepper to taste. Remove bay leaves before serving.
  6. Serve
    Serve hot over steamed white rice. Garnish with fresh chopped parsley if desired. Afritada is traditionally served family-style in a large serving dish.
