  1. Prepare the beef
    In a large pot, heat oil over medium-high heat. Season beef cubes with salt and pepper, then sear in batches until browned on all sides, about 3-4 minutes per batch. Remove beef and set aside.
  2. Make the base
    In the same pot, add onions and garlic and sauté until soft and aromatic, about 3 minutes. Add diced tomatoes and cook for another 2 minutes until softened. Pour in tomato sauce and bring to a simmer.
  3. Simmer the beef
    Return the beef to the pot and add beef broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 1.5 to 2 hours or until the beef is tender. Check occasionally and add more broth if needed.
  4. Add vegetables
    Once the beef is tender, add potatoes and cook for 10 minutes. Add plantains and chorizo, then cook for another 10 minutes. Finally, add garbanzo beans, cabbage, and bok choy. Cook for 5 more minutes until vegetables are just tender.
  5. Season and serve
    Taste and adjust seasoning with salt and pepper as needed. Remove from heat and let stand for 5 minutes before serving. Serve hot in deep bowls with steamed rice on the side.
