  1. Prepare the pork
    In a large pot, heat the vegetable oil over medium-high heat. Add the pork pieces and sear until lightly browned on all sides, about 5-7 minutes. This step helps develop flavor for the broth.
  2. Create the base
    Add the quartered onions and tomatoes to the pot with the pork. Stir in the fish sauce and cook for another 2-3 minutes until the vegetables begin to soften.
  3. Make the broth
    Pour in the water and bring to a boil. Once boiling, reduce heat to a simmer, cover, and cook for about 45 minutes or until the pork is tender. Skim off any foam or impurities that rise to the surface.
  4. Add the tamarind
    Stir in the tamarind soup base powder (or tamarind paste if using). If using fresh tamarind, prepare by soaking in hot water, mashing, and straining the pulp into the soup. Simmer for 5 minutes to incorporate the sour flavor.
  5. Cook the hard vegetables
    Add the daikon radish and taro roots to the pot. Simmer for 10 minutes until they begin to soften but are not yet fully cooked.
  6. Add remaining vegetables
    Add the string beans and eggplant. Continue to simmer for 5-7 minutes. Then add the water spinach and green finger chilis. Cook for an additional 3 minutes until all vegetables are tender but not mushy.
  7. Final seasoning
    Taste the soup and adjust the seasoning with additional fish sauce, salt, or pepper as needed. The soup should have a pleasant balance of sour and savory flavors.
