  1. Prepare the beef
    Season beef chunks with salt and pepper. In a large pot or Dutch oven, heat oil over medium-high heat. Brown the beef in batches, about 3-4 minutes per side. Transfer browned beef to a plate and set aside.
  2. Sauté the aromatics
    In the same pot, add a bit more oil if needed. Sauté onions until translucent, about 3 minutes. Add garlic and cook for another minute until fragrant.
  3. Simmer the beef
    Return the beef to the pot. Add bay leaves and beef broth. Bring to a boil, then reduce heat to low. Cover and simmer for about 1.5 hours or until the beef is tender.
  4. Add vegetables
    Add carrots and potatoes to the pot. Continue simmering for 15 minutes until vegetables start to soften.
  5. Incorporate the sauce
    Stir in tomato sauce and liver spread until well combined. Add fish sauce to taste. Simmer for another 15 minutes, stirring occasionally to prevent sticking.
  6. Add final ingredients
    Add bell peppers and green olives. If using, add hot sauce or chili peppers for heat. Simmer for 10 more minutes until peppers are tender but still have some crunch.
  7. Adjust seasoning
    Taste and adjust seasonings as needed, adding more fish sauce for saltiness or hot sauce for heat. The sauce should be rich and thick. If too thick, add a little water or broth.
