
Chicken Afritada
Classic Filipino tomato-based chicken stew with vegetables

Prepare the chickenSeason chicken pieces with salt and pepper. Heat vegetable oil in a large pot over medium-high heat. Add chicken and brown on all sides, about 5-7 minutes. Remove chicken and set aside.

Sauté the aromaticsIn the same pot, add onions and sauté until translucent, about 3 minutes. Add garlic and cook until fragrant, about 1 minute. Be careful not to burn the garlic.

Create the tomato baseAdd tomato paste and cook for 1 minute, stirring constantly. Pour in the diced tomatoes and chicken broth. Add bay leaves and bring to a simmer. Return the browned chicken to the pot.

Simmer the stewCover and simmer on low heat for 20 minutes, or until chicken is almost tender. Stir occasionally to prevent sticking.

Add the vegetablesAdd potatoes and carrots to the pot. Continue simmering for 10 minutes. Then add bell peppers and green peas. Simmer for another 5-7 minutes until all vegetables are tender but not mushy.

Season the stewAdd fish sauce, and adjust seasoning with salt and pepper to taste. Gently stir to combine all flavors, being careful not to break apart the vegetables.

Final simmerSimmer uncovered for 5 more minutes to allow the sauce to reduce slightly and flavors to meld together. Remove bay leaves before serving.
