  1. Combine base ingredients
    In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey or brown sugar, and lime juice until smooth and well incorporated.
  2. Add aromatics
    Stir in the minced garlic, grated ginger, and sriracha or sambal oelek. Mix thoroughly to ensure the aromatics are evenly distributed throughout the sauce.
  3. Adjust consistency
    Gradually add water while whisking until you reach your desired consistency. For a dipping sauce, you want it thick enough to cling to food but thin enough to easily dip into. Add more water if needed.
  4. Finish the sauce
    Stir in the sesame oil for richness and depth of flavor. If using, add the chopped cilantro and fish sauce for additional complexity and authentic flavor.
  5. Heat (optional)
    For a warmer, more aromatic sauce, transfer the mixture to a small saucepan and heat over low heat for 3-5 minutes, stirring constantly to prevent burning. This step helps meld the flavors together.
  6. Rest and serve
    Allow the sauce to cool for at least 5 minutes if heated. The flavors will continue to develop as it sits. Transfer to a serving bowl and serve at room temperature with spring rolls, satay, or as a dressing.
