  1. Prepare the sauce
    In a medium bowl, whisk together the mayonnaise, Thai sweet chili sauce, sriracha, and honey until smooth and well combined. Set aside while preparing the shrimp.
  2. Create the dredging station
    Set up your dredging station with three bowls. In the first bowl, combine flour, cornstarch, salt, black pepper, and cayenne pepper (if using). In the second bowl, add the beaten eggs. Leave the third bowl empty for the coated shrimp.
  3. Coat the shrimp
    Pat the shrimp dry with paper towels. Dip each shrimp first in the flour mixture, then into the beaten eggs, and back into the flour mixture, ensuring they are well coated. Place the coated shrimp in the empty bowl.
  4. Fry the shrimp
    Heat about 2 inches of vegetable oil in a large, deep skillet or pot to 350°F (175°C). Working in batches, fry the shrimp for 2-3 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
  5. Toss with sauce
    While the shrimp are still hot, place them in a large bowl and pour the bang bang sauce over them. Gently toss until all shrimp are evenly coated with the sauce.
  6. Serve and garnish
    Transfer the shrimp to a serving plate, garnish with sliced green onions and sesame seeds if desired. Serve immediately while hot and crispy.
