  1. Prepare the natto
    Open the natto packages and stir the beans vigorously with chopsticks for about 1 minute until they become sticky and develop strings. Mix in the sauce packets that come with the natto.
  2. Cook the soba noodles
    Bring a large pot of water to a boil. Add the soba noodles and cook according to package instructions, usually 4-5 minutes. Avoid overcooking as they should remain slightly firm.
  3. Rinse the noodles
    Drain the noodles in a colander and immediately rinse under cold running water. Use your hands to gently rub the noodles together to remove excess starch. Drain well and set aside.
  4. Prepare the toppings
    In a small bowl, mix the prepared natto with grated ginger and soy sauce. Set aside the sliced green onions, nori strips, and wasabi.
  5. Assemble the dish
    Divide the cold soba noodles between two serving bowls. Top each bowl with half of the natto mixture in the center. Arrange the green onions and nori strips around the natto.
  6. Add final touches
    Place a small dollop of wasabi on the side of each bowl. Sprinkle with toasted sesame seeds. If using, carefully place a raw egg yolk on top of the natto.
  7. Serve
    Serve immediately with diluted mentsuyu sauce on the side for dipping or pouring over the noodles according to preference. Mix all ingredients together thoroughly before eating.
