Instructions

  1. Prepare the natto
Open the natto packages and empty them into a medium-sized bowl. Add the included tare sauce and karashi mustard. Mix vigorously with chopsticks in a circular motion for about 2 minutes, until the natto becomes sticky and develops strings when lifted.
  2. Mix additional seasonings
Add the soy sauce and dashi powder (if using) to the natto mixture. Continue to stir for another 30 seconds to incorporate all seasonings evenly throughout the fermented soybeans.
  3. Portion the rice
Divide the warm Japanese rice between two serving bowls, creating a small indentation in the center of each portion for the natto mixture.
  4. Assemble the bowls
Spoon the prepared natto mixture into the center of each rice bowl. If using raw egg yolks, create a small well in the natto and place one yolk in each bowl. Sprinkle with chopped green onions, nori strips, and toasted sesame seeds.
  5. Serve immediately
Serve the natto rice bowls right away while the rice is still warm. Before eating, mix everything together thoroughly to combine all the flavors and create the signature stringy texture that natto is known for.
