  1. Prepare the mushrooms
    Clean the mushrooms with a damp paper towel to remove any dirt. Remove the stems from shiitake mushrooms if using. Slice all mushrooms into thin, even pieces.
  2. Sauté aromatics
    Heat sesame oil in a large pot over medium heat. Add the white parts of the green onions, grated ginger, and minced garlic. Sauté for 2 minutes until fragrant, being careful not to burn the garlic.
  3. Cook the mushrooms
    Add the sliced mushrooms to the pot and cook for 3-4 minutes until they begin to soften and release their moisture. Stir occasionally to prevent sticking.
  4. Add liquids
    Pour in the dashi stock (or vegetable broth) and bring to a gentle simmer. Add soy sauce and rice vinegar, then simmer for 5 minutes to allow the flavors to meld together.
  5. Incorporate miso paste
    Place miso paste in a small bowl and add a ladleful of hot broth from the pot. Whisk until the miso is completely dissolved, then pour this mixture back into the pot. Never boil the soup after adding miso as high heat destroys its flavor and nutritional benefits.
  6. Add tofu
    Gently add the cubed tofu to the soup and simmer for another 2-3 minutes to warm the tofu through without breaking it apart.
  7. Final touches
    Remove from heat and garnish with the green parts of the sliced green onions and nori strips if using. Taste and adjust seasoning if needed before serving hot in individual bowls.
