  1. Prepare the chocolate mixture
    In a medium saucepan, whisk together the cocoa powder, granulated sugar, espresso powder, and salt until well combined. This ensures even distribution of flavors throughout the hot chocolate.
  2. Heat the milk
    Gradually add the milk to the saucepan, whisking continuously to prevent lumps. Heat over medium-low heat, stirring frequently until the mixture is hot but not boiling, about 5 minutes.
  3. Add the chocolate
    Add the chopped dark chocolate to the hot milk mixture. Reduce heat to low and whisk constantly until the chocolate is completely melted and the mixture is smooth and velvety, about 3-4 minutes.
  4. Finish the hot chocolate
    Remove from heat and stir in the vanilla extract. Taste and adjust sweetness if needed by adding more sugar, one teaspoon at a time.
  5. Prepare the whipped cream
    While the hot chocolate is cooling slightly, whip the heavy cream with powdered sugar in a chilled bowl until soft peaks form. This should take about 2-3 minutes with an electric mixer or 5-6 minutes by hand.
  6. Serve
    Pour the mocha hot chocolate into warmed mugs, top with a generous dollop of whipped cream, and sprinkle with chocolate shavings or a light dusting of cocoa powder. Serve immediately while hot.
