  1. Combine the dry ingredients
    In a medium bowl, whisk together the cocoa powder, cinnamon (if using), cayenne (if using), and sea salt until well combined and any lumps are broken up.
  2. Heat the plant milk
    Pour the almond milk into a medium saucepan and heat over medium-low heat until it begins to steam, but don't let it boil. Stir occasionally to prevent scorching.
  3. Create the chocolate base
    Gradually whisk the dry ingredient mixture into the warm milk until fully incorporated. Continue to heat, whisking frequently, for about 3-4 minutes until smooth.
  4. Add sweetener and flavorings
    Stir in the maple syrup and vanilla extract. Adjust sweetness to taste by adding more maple syrup if desired.
  5. Melt in the chocolate
    Add the chopped dark chocolate to the saucepan and whisk until completely melted and the mixture is smooth and velvety, about 2 minutes. Keep the heat low to avoid burning.
  6. Serve and garnish
    Pour the hot chocolate into mugs and top with vegan whipped cream and vegan marshmallows if desired. Sprinkle with a little extra cinnamon or cocoa powder for garnish.
