  1. Prepare the egg mixture
    In a large bowl, whisk together the eggs and milk until well combined. Season with salt and pepper. Set aside.
  2. Sauté the vegetables
    Heat olive oil in a 10-inch oven-safe skillet over medium heat. Add the onions and cook for 3-4 minutes until softened. Add garlic and cook for another 30 seconds until fragrant. Add zucchini and bell pepper and cook for 5-6 minutes until vegetables are tender.
  3. Add Mediterranean flavors
    Stir in the olives, sun-dried tomatoes, oregano, and basil. Cook for 1-2 minutes to blend the flavors together. Distribute ingredients evenly in the pan.
  4. Add eggs and cheese
    Pour the egg mixture into the skillet over the vegetables. Sprinkle the crumbled feta cheese evenly over the top. Reduce heat to medium-low and cook for 5-7 minutes until the edges start to set.
  5. Finish in the oven
    Preheat the broiler. Place the skillet under the broiler about 6 inches from the heat source and cook for 3-5 minutes until the top is set and lightly golden. Watch carefully to prevent burning.
  6. Garnish and serve
    Remove from the oven and let cool for 5 minutes. Sprinkle with fresh parsley. Cut into wedges and serve warm or at room temperature.
