Prepare the marinadeIn a large bowl, whisk together olive oil, lemon juice, dried oregano, minced garlic, lemon zest, salt, pepper, and honey until well combined.

Marinate the chickenAdd the chicken cubes to the marinade and toss to coat evenly. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.

Prepare the skewersIf using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated chicken pieces onto skewers, alternating with pieces of red onion and bell peppers.

Preheat the grillPreheat your grill to medium-high heat (around 400°F/200°C). Lightly oil the grates to prevent sticking.

Grill the skewersPlace the skewers on the grill and cook for 12-15 minutes, turning every 3-4 minutes, until the chicken is cooked through (internal temperature of 165°F/74°C) and has nice grill marks.

Rest and serveRemove the skewers from the grill and let them rest for 5 minutes. Serve hot with additional lemon wedges, a sprinkle of fresh oregano, and your favorite sides such as Greek salad, tzatziki sauce, or warm pita bread.
