  1. Marinate the chicken
    In a large bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, cumin, paprika, salt, and pepper. Add chicken thighs and toss to coat. Cover and refrigerate for at least 2 hours, preferably overnight for maximum flavor.
  2. Prepare tzatziki sauce
    Squeeze excess moisture from the grated cucumber using a clean kitchen towel. In a medium bowl, combine Greek yogurt, drained cucumber, dill, 1 minced garlic clove, 1 tablespoon olive oil, and a squeeze of lemon juice. Season with salt and refrigerate until ready to use.
  3. Cook the chicken
    Heat a grill pan or skillet over medium-high heat. Remove chicken from marinade and cook for 5-7 minutes per side, or until fully cooked (internal temperature of 165°F/74°C). Let rest for 5 minutes, then slice into thin strips.
  4. Warm the pita bread
    Heat pita breads on a dry skillet or in the oven at 350°F (175°C) for 1-2 minutes until warm and pliable.
  5. Assemble the gyros
    Spread tzatziki sauce on each warm pita bread. Top with sliced chicken, red onion, tomatoes, and crumbled feta cheese. Fold the pita or wrap in parchment paper for easier handling.
  6. Serve immediately
    Serve gyros immediately with additional tzatziki sauce on the side and a squeeze of fresh lemon juice if desired.
