  1. Cook the sausages
    Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the Italian sausage links and cook until browned on all sides and cooked through, about 10-12 minutes. Transfer to a plate and let cool slightly before slicing on a diagonal.
  2. Sauté the vegetables
    In the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell peppers and onions, cooking over medium heat until they begin to soften, about 5-7 minutes. Add the minced garlic, dried oregano, and red pepper flakes (if using). Cook for another 1-2 minutes until fragrant.
  3. Combine sausage and vegetables
    Return the sliced sausage to the skillet with the peppers and onions. Add the marinara sauce and stir to combine. Season with salt and pepper to taste. Simmer for 5 minutes to allow the flavors to meld together.
  4. Toast the rolls
    While the sausage mixture is simmering, preheat the broiler. Split the hoagie rolls lengthwise, leaving them connected on one side. Place them cut-side up on a baking sheet and toast under the broiler for 1-2 minutes until lightly golden.
  5. Assemble the subs
    If using provolone cheese, place one slice on each toasted roll. Divide the sausage and pepper mixture evenly among the rolls. Return to the broiler for 1 minute if you want to melt the cheese. Serve immediately while hot.
