Instructions

  1. Prepare the tomato mixture
In a medium bowl, combine the diced tomatoes, minced garlic, basil, olive oil, balsamic vinegar, salt, and pepper. Mix gently and let sit at room temperature for at least 15 minutes to allow the flavors to meld together.
  2. Toast the bread
Preheat your oven to 450°F (230°C). Arrange the bread slices on a baking sheet. Brush each slice with olive oil on both sides. Bake for 5-6 minutes until the bread is golden and crispy around the edges.
  3. Rub with garlic
While the bread is still warm, rub one side of each slice with the whole garlic clove. The rough surface of the toasted bread will act like a grater for the garlic, imparting its flavor onto the bread.
  4. Assemble the bruschetta
Spoon the tomato mixture generously onto each slice of the garlic-rubbed toast. If using, sprinkle with Parmesan cheese and red pepper flakes.
  5. Serve immediately
Arrange the bruschetta on a serving platter and serve while the bread is still crisp and the topping is at room temperature. For the best flavor and texture, don't let the topped bruschetta sit for too long before serving.
