  1. Brew the coffee
    Prepare strong coffee using your preferred brewing method. If using instant coffee, dissolve 2 tablespoons in 1/2 cup hot water. Allow it to cool completely in the refrigerator for at least 30 minutes.
  2. Blend the base
    In a blender, combine the Greek yogurt, cooled coffee, honey or jaggery syrup, and the instant coffee powder (if using). Blend on medium speed until smooth and well incorporated, about 30-45 seconds.
  3. Add spices and milk
    Add the ground cardamom, cinnamon, nutmeg, and milk (if using) to the blender. Pulse a few times until the spices are evenly distributed throughout the mixture.
  4. Incorporate ice
    Add the crushed ice to the blender and blend on high speed until the mixture is smooth and frothy, approximately 30-45 seconds. The consistency should be similar to a thick milkshake.
  5. Serve and garnish
    Pour the lassi coffee into chilled glasses, top with chopped pistachios, and optionally sprinkle with a pinch of additional ground cardamom or cinnamon for garnish. Serve immediately.
