  1. Marinate the lamb
    In a large bowl, combine the lamb with yogurt, half of the minced garlic, half of the grated ginger, 1 teaspoon cumin, 1 teaspoon coriander, turmeric, and 1/2 teaspoon salt. Mix well, cover, and refrigerate for at least 2 hours or overnight for best results.
  2. Prepare the rice
    Bring a large pot of salted water to a boil. Add the soaked and drained basmati rice along with green cardamom pods. Cook until the rice is 70% done (about 5-6 minutes). Drain and set aside.
  3. Fry the onions
    Heat 2 tablespoons of ghee in a large, heavy-bottomed pot over medium heat. Add the thinly sliced onions and cook, stirring occasionally, until they turn golden brown and caramelized, about 15-20 minutes. Remove half of the fried onions and set aside for garnish.
  4. Cook the lamb
    To the pot with remaining onions, add the remaining garlic and ginger. Sauté for 1 minute until fragrant. Add the marinated lamb along with its marinade. Cook on medium-high heat for 5 minutes, stirring occasionally. Then reduce heat to medium-low, cover, and simmer for about 45 minutes or until the lamb is tender.
  5. Layer the biryani
    Once the lamb is tender, spread it evenly at the bottom of the pot. Sprinkle half of the mint and cilantro leaves over the meat. Layer the partially cooked rice on top of the lamb. Sprinkle the remaining garam masala, ground cardamom, and the rest of the mint and cilantro leaves over the rice.
  6. Final cooking (Dum)
    Drizzle the remaining tablespoon of ghee over the rice. Cover the pot with a tight-fitting lid, sealing it with dough or foil if necessary to prevent steam from escaping. Cook on very low heat for 20-25 minutes to allow the flavors to meld together and the rice to fully cook.
  7. Serve the biryani
    Let the biryani rest for 10 minutes after removing from heat. Gently mix the layers before serving, taking care not to break the rice grains. Garnish with the reserved fried onions and serve hot with raita (yogurt sauce) on the side.
