    Heat the vegetable oil in a large skillet over medium-high heat. Fry each tortilla for about 30 seconds per side until crisp but not too hard. Transfer to paper towels to drain excess oil.
  2. Warm the beans
    Heat the refried black beans in a small saucepan over medium heat, stirring occasionally until hot throughout. Add a splash of water if needed to achieve desired consistency.
  3. Cook the eggs
    In a large non-stick skillet, fry the eggs sunny-side up or to your preferred doneness. Season with salt and pepper. For authentic Huevos Motuleños, the yolks should remain runny.
  4. Heat the salsa
    In another small saucepan, warm the tomato salsa or ranchero sauce over medium-low heat until hot but not boiling.
  5. Assemble the dish
    Spread a layer of refried black beans on each fried tortilla. Place two tortillas on each serving plate. Top each tortilla with a fried egg.
  6. Add toppings
    Spoon the warm tomato salsa over the eggs. Sprinkle the diced ham and cooked green peas over the top. Add sliced jalapeños or habaneros according to your spice preference.
  7. Garnish and serve
    Finish each plate with sliced avocado, crumbled queso fresco, and a sprinkle of fresh cilantro. Serve immediately while everything is still warm.
