Cook the eggsIn a large non-stick skillet, fry the eggs sunny-side up or to your preferred doneness. Season with salt and pepper. For authentic Huevos Motuleños, the yolks should remain runny.

Heat the salsaIn another small saucepan, warm the tomato salsa or ranchero sauce over medium-low heat until hot but not boiling.

Assemble the dishSpread a layer of refried black beans on each fried tortilla. Place two tortillas on each serving plate. Top each tortilla with a fried egg.

Add toppingsSpoon the warm tomato salsa over the eggs. Sprinkle the diced ham and cooked green peas over the top. Add sliced jalapeños or habaneros according to your spice preference.
