Zesty Yucatán-style chicken soup with fresh lime

Prepare the chickenIn a large pot, bring chicken broth to a simmer. Add chicken pieces, half an onion, and 2 whole garlic cloves. Simmer gently for about 25 minutes until chicken is fully cooked. Remove chicken, let cool slightly, then shred the meat, discarding bones. Strain the broth and set aside.

Make the tortilla stripsWhile the chicken cooks, heat 2 tablespoons of oil in a large skillet over medium heat. Add the tortilla strips in batches and fry until crisp and golden, about 2-3 minutes. Transfer to paper towels to drain and sprinkle lightly with salt.

Prepare the soup baseIn a large pot, heat the remaining tablespoon of oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic, jalapeños, and bell pepper, cooking for another 3 minutes until softened. Stir in the diced tomatoes, oregano, and cumin. Cook for 5 minutes until tomatoes break down slightly.

Combine and simmerPour the strained chicken broth into the pot with the vegetable mixture. Bring to a simmer and cook for 10 minutes to allow flavors to meld. Add the shredded chicken and return to a simmer. Stir in the juice of 3 limes and chopped cilantro. Season with salt and pepper to taste.

Serve the soupLadle the hot soup into bowls. Top each serving with tortilla strips, diced avocado, additional cilantro, and a slice of lime. Serve immediately while hot.
