  1. Prepare the spices
    If desired, place the cloves, allspice berries, and cracked nutmeg into a small cheesecloth bag or spice infuser for easy removal later. Alternatively, you can add them directly to the pot and strain before serving.
  2. Combine ingredients
    In a large pot or Dutch oven, combine the apple cider, cinnamon sticks, prepared spice bundle (or loose spices), sliced orange, sliced lemon, and ginger slices. If using maple syrup for additional sweetness, add it now.
  3. Heat gently
    Bring the mixture to a simmer over medium heat. Once it begins to simmer, reduce the heat to low. Do not boil, as this can affect the flavor and cause too much liquid to evaporate.
  4. Simmer and infuse
    Allow the cider to simmer gently for 20-30 minutes, stirring occasionally. The longer it simmers, the stronger the spice flavors will become. Taste occasionally and remove from heat when the desired flavor is reached.
  5. Add optional alcohol
    If making an adult version, remove from heat and stir in the brandy or bourbon now. Do not add alcohol while the mixture is still on the heat as this will burn off the alcohol.
  6. Serve warm
    Strain the cider through a fine-mesh sieve or remove the spice bundle. Ladle the hot mulled cider into mugs and garnish each with a fresh cinnamon stick and a slice of orange if desired.
