  1. Prepare the oven
    Preheat your oven to 325°F (165°C). Line a large rimmed baking sheet with parchment paper.
  2. Mix dry ingredients
    In a large mixing bowl, combine the rolled oats, chopped almonds, walnuts, coconut flakes, pepitas, sunflower seeds, cinnamon, and salt. Stir well to ensure even distribution.
  3. Add wet ingredients
    In a separate bowl, whisk together the melted coconut oil, maple syrup, honey, and vanilla extract until well combined. Pour this mixture over the dry ingredients and stir thoroughly until everything is evenly coated.
  4. Spread and bake
    Spread the granola mixture evenly onto the prepared baking sheet. Press it down slightly with a spatula to encourage clumping. Bake for 20-25 minutes, stirring gently halfway through to ensure even browning. The granola should be golden brown when done.
  5. Cool completely
    Remove the granola from the oven and let it cool completely on the baking sheet without stirring. This will help create those desirable crunchy clusters. The granola will continue to crisp up as it cools.
  6. Add dried fruit
    Once the granola has cooled completely, add the dried cranberries and cherries or raisins and gently mix them in. Adding the dried fruit after baking prevents it from becoming too hard or burnt.
  7. Store properly
    Transfer the cooled granola to an airtight container. It will keep at room temperature for up to 2 weeks, or in the freezer for up to 3 months.
