Instructions

  1. Mix the Base
In a medium bowl, whisk together the almond milk, maple syrup, vanilla extract, cinnamon, and salt until well combined.
  2. Add Chia Seeds
Add the chia seeds to the liquid mixture and whisk immediately to prevent clumping. Continue whisking for about 1 minute to ensure even distribution of the seeds.
  3. Initial Rest
Let the mixture sit for 10 minutes, then whisk again to break up any clumps that may have formed. This ensures a smooth pudding texture.
  4. Refrigerate Overnight
Cover the bowl with plastic wrap or transfer the mixture to airtight containers. Refrigerate for at least 8 hours or overnight to allow the chia seeds to absorb the liquid and form a pudding-like consistency.
  5. Prepare Toppings
When ready to serve, prepare your fresh berries by washing and slicing them if necessary. Toast the sliced almonds in a dry pan over medium heat for 2-3 minutes until lightly golden if desired.
  6. Serve and Garnish
Stir the pudding well, then divide it into serving bowls or glasses. Top with mixed berries, sliced banana if using, toasted almonds, and shredded coconut. Drizzle with additional maple syrup if desired.
