Prepare the vegetablesRemove the outer leaves of the cabbage, cut it in half, remove the core, and finely shred it using a sharp knife or food processor. Peel and grate the carrots. Thinly slice the red onion. Place all prepared vegetables in a large mixing bowl.

Make the dressingIn a medium bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, sugar, celery seeds, salt, pepper, and lemon juice until smooth and well combined.

Combine and coatPour the dressing over the shredded vegetables and toss thoroughly to coat evenly. Make sure all the cabbage is covered with the dressing.

Chill and serveCover the bowl with plastic wrap and refrigerate for at least 1 hour before serving, or ideally 2-3 hours to allow the flavors to meld. Stir again before serving to redistribute the dressing.

Adjust seasoningBefore serving, taste the coleslaw and adjust seasoning if needed. You may want to add more salt, pepper, or a splash of vinegar depending on your preference.
