  1. Prepare the carrots
    Peel and grate the carrots using the large holes of a box grater or a food processor with the grating attachment. Place the grated carrots in a large mixing bowl.
  2. Plump the raisins
    Place the golden raisins in a small bowl and cover with warm water. Let them soak for about 5 minutes to plump up, then drain thoroughly and add to the bowl with the carrots.
  3. Make the dressing
    In a separate small bowl, whisk together the mayonnaise, honey, lemon juice, cinnamon, and salt until smooth and well combined. Taste and adjust seasonings if needed.
  4. Combine ingredients
    Pour the dressing over the carrots and raisins. Add the chopped walnuts and diced pineapple if using. Toss everything together until the carrots are evenly coated with the dressing.
  5. Final touches
    Sprinkle the chopped parsley over the salad and gently fold it in. For best flavor, cover the bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
