
Three Bean Salad
A colorful, protein-packed vegetarian side dish

Prepare the beansDrain and rinse all three types of beans thoroughly in a colander under cold water. Allow excess water to drain completely before transferring to a large mixing bowl.

Add the vegetablesAdd the thinly sliced red onion, diced red bell pepper, and chopped fresh parsley to the bowl with the beans. Gently toss to combine all ingredients evenly.

Make the dressingIn a small bowl, whisk together the apple cider vinegar, olive oil, honey or sugar, minced garlic, Dijon mustard, dried oregano, salt and pepper until well combined and slightly emulsified.

Combine and marinatePour the dressing over the bean mixture and toss gently to coat all ingredients evenly. Make sure everything is well incorporated without crushing the beans.

Chill and serveCover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight to allow the flavors to meld together. The longer it marinates, the better the flavor will be. Stir occasionally if marinating for longer periods.

Final seasoningBefore serving, taste and adjust seasoning with additional salt, pepper, or vinegar if needed. Serve chilled as a side dish or light meal.
