
Herb and Cheese Frittata
Light, fluffy Italian-style omelet packed with fresh herbs

Prepare the egg mixtureIn a large bowl, whisk together the eggs and milk until well combined. Season with salt and pepper. Stir in the chopped herbs and half of both cheeses. Set aside.

Sauté the aromaticsHeat the olive oil in a 10-inch oven-safe skillet over medium heat. Add the diced onion and cook until softened and translucent, about 5 minutes. Add the minced garlic and cook for another 30 seconds until fragrant.

Add the egg mixturePour the egg mixture into the skillet with the onions and garlic. Gently stir to distribute the ingredients evenly. Cook undisturbed for about 5 minutes until the edges begin to set while the center is still slightly runny.

Top and finish in the ovenSprinkle the remaining cheese over the top of the frittata. Transfer the skillet to a preheated 375°F (190°C) oven and bake for 10-12 minutes, until the eggs are completely set and the top is lightly golden.

ServeRemove from the oven (remember the handle will be hot!) and let rest for 5 minutes. Slice into wedges and serve warm or at room temperature. Garnish with additional fresh herbs if desired.
