
Broccoli and Cheddar Frittata

Prepare the eggsIn a large bowl, whisk together the eggs, milk, salt, and black pepper until well combined. Set aside while you prepare the vegetables.

Cook the vegetablesHeat olive oil in a 10-inch oven-safe skillet over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another 30 seconds until fragrant. Add the broccoli florets and cook, stirring occasionally, until the broccoli is bright green and slightly tender, about 4-5 minutes.

Combine the ingredientsReduce the heat to medium-low. Pour the egg mixture over the vegetables in the skillet. Sprinkle 1 cup of the grated cheddar cheese evenly over the eggs. Add the chopped chives, parsley, and red pepper flakes if using. Allow the eggs to cook undisturbed for about 3-4 minutes until the edges start to set.

Finish in the ovenPreheat the broiler. While the edges of the frittata are setting on the stovetop, sprinkle the remaining 1/2 cup of cheddar cheese on top. Transfer the skillet to the oven and broil for 3-5 minutes, until the top is golden brown and the center is set. Watch carefully to prevent burning.

Serve the frittataRemove the skillet from the oven (remember the handle will be very hot!). Let the frittata cool for 5 minutes. Run a spatula around the edges and underneath to loosen it from the pan. Slice into wedges and serve warm or at room temperature.
