
Hash Brown Breakfast Casserole

Prepare the baking dishPreheat oven to 375°F (190°C). Grease a 9x13 inch baking dish with cooking spray or butter. Spread the thawed hash browns evenly in the bottom of the dish.

Cook the sausage mixtureHeat olive oil in a large skillet over medium heat. Add the sausage and break it apart with a wooden spoon as it cooks. When sausage is about halfway cooked, add the diced onion and bell pepper. Continue cooking until sausage is no longer pink and vegetables are softened, about 5-7 minutes. Add minced garlic and cook for another 30 seconds until fragrant.

Prepare the egg mixtureIn a large bowl, whisk together eggs, milk, salt, pepper, and dried herbs until well combined. Stir in 1 1/2 cups of the shredded cheese and half of the green onions.

Assemble the casseroleDistribute the cooked sausage mixture evenly over the hash browns in the baking dish. Pour the egg mixture over the top, ensuring it spreads evenly throughout the casserole.

Bake the casseroleSprinkle the remaining 1/2 cup of cheese over the top of the casserole. Cover with aluminum foil and bake for 30 minutes. Then remove the foil and bake for another 15 minutes until the eggs are set and the top is golden brown.

ServeRemove from oven and let stand for 5 minutes before cutting. Sprinkle with remaining green onions and serve hot. This casserole can be enjoyed with hot sauce, salsa, or sour cream on the side.
