
Breakfast Pizza
Crispy crust topped with eggs, bacon and cheese for a morning treat

Prepare the doughPreheat oven to 450°F (230°C). If using refrigerated dough, allow it to come to room temperature for about 30 minutes. Lightly flour a work surface and roll the dough into a 12-inch circle or shape into a 12x16-inch rectangle if using a sheet pan.

Pre-bake the crustTransfer the dough to a pizza stone or baking sheet lined with parchment paper. Brush the surface with 1 tablespoon olive oil. Using a fork, prick the dough all over to prevent bubbling. Bake for 8 minutes, or until just beginning to brown.

Add base toppingsRemove the partially baked crust from the oven. Spread the pizza sauce evenly across the surface, leaving a 1/2-inch border. Sprinkle with 1 cup of mozzarella cheese, followed by the crumbled bacon, breakfast sausage, and diced red bell pepper.

Create wells for eggsUsing the back of a spoon, create 4 small wells in the toppings, evenly spaced apart. Carefully crack an egg into each well. Sprinkle the remaining mozzarella around (not on top of) the eggs.

Final bakingReturn the pizza to the oven and bake for 8-10 minutes, or until the egg whites are set but yolks are still runny (or longer if you prefer firmer yolks) and the crust is golden brown. The cheese should be melted and slightly golden.

Finish and serveRemove the pizza from the oven and immediately sprinkle with Parmesan cheese, green onions, dried oregano, and red pepper flakes if using. Drizzle with the remaining tablespoon of olive oil. Let rest for 2 minutes before slicing and serving warm.
