  1. Prepare the baking dish
    Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish with butter or cooking spray.
  2. Sauté the vegetables
    In a large skillet over medium heat, melt the butter. Add the diced onions and bell peppers and sauté until softened, about 5-6 minutes. Add the diced ham and cook for an additional 2 minutes until slightly browned. Remove from heat and let cool slightly.
  3. Prepare the egg mixture
    In a large bowl, whisk together the eggs, milk, salt, pepper, and paprika until well combined and slightly frothy.
  4. Assemble the casserole
    Spread the ham and vegetable mixture evenly in the prepared baking dish. Sprinkle 1 1/2 cups of the shredded cheese over the ham and vegetables. Pour the egg mixture evenly over the top.
  5. Bake the casserole
    Bake in the preheated oven for 30 minutes, or until the eggs are almost set in the middle.
  6. Add final cheese and finish baking
    Sprinkle the remaining 1/2 cup of cheese over the top of the casserole and return to the oven for an additional 10 minutes, or until the eggs are completely set and the cheese is melted and slightly golden.
  7. Rest and serve
    Remove from the oven and let rest for 5 minutes. Garnish with fresh chopped chives. Cut into squares and serve warm.
