
Sausage and Grits Casserole

Prepare the gritsIn a large saucepan, bring the chicken broth to a boil over medium-high heat. Slowly whisk in the grits and reduce heat to low. Cover and simmer for 20-25 minutes, stirring occasionally, until thick and creamy. Remove from heat.

Cook the sausage mixtureWhile the grits are cooking, brown the sausage in a large skillet over medium heat, breaking it into small pieces. Once browned, add the chopped onion and bell pepper to the skillet and cook until vegetables are soft, about 5 minutes. Add the garlic and cook for another minute until fragrant.

Combine ingredientsStir the butter into the hot grits until melted. Then add 1 1/2 cups of the cheddar cheese and all of the Parmesan cheese, stirring until melted and well combined. In a small bowl, whisk together the eggs and milk, then gradually stir into the grits mixture. Add the thyme, cayenne (if using), and salt and pepper to taste.

Assemble the casserolePreheat oven to 350°F (175°C). Fold the sausage mixture into the grits mixture. Grease a 9x13-inch baking dish and pour the grits and sausage mixture into it. Sprinkle the remaining 1/2 cup of cheddar cheese over the top.

Bake the casseroleBake uncovered in the preheated oven for 40-45 minutes until golden brown and set in the center. Allow to rest for 10 minutes before serving. Garnish with sliced green onions.
