Prepare the marinadeIn a large bowl, combine the minced lemongrass, garlic, fish sauce, soy sauce, brown sugar, vegetable oil, black pepper, and lime juice. Mix well until the sugar is dissolved.

Marinate the beefAdd the thinly sliced beef to the marinade and mix thoroughly to coat each piece. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight for the best flavor development.

Prepare for grillingRemove the marinated beef from the refrigerator 30 minutes before cooking to bring it to room temperature. Thread the beef slices onto the pre-soaked wooden skewers, folding each slice as needed to secure it.
