  1. Prepare the marinade
    In a large bowl, combine the minced lemongrass, garlic, fish sauce, soy sauce, brown sugar, vegetable oil, black pepper, and lime juice. Mix well until the sugar is dissolved.
  2. Marinate the beef
    Add the thinly sliced beef to the marinade and mix thoroughly to coat each piece. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight for the best flavor development.
  3. Prepare for grilling
    Remove the marinated beef from the refrigerator 30 minutes before cooking to bring it to room temperature. Thread the beef slices onto the pre-soaked wooden skewers, folding each slice as needed to secure it.
  4. Grill the beef
    Preheat your grill to medium-high heat (around 400°F/200°C). Place the beef skewers on the grill and cook for 3-4 minutes per side, or until the beef is nicely charred on the outside and reaches your desired level of doneness.
  5. Rest and garnish
    Transfer the grilled beef skewers to a serving plate and let them rest for 5 minutes. Garnish with sliced red onions and freshly chopped cilantro before serving.
  6. Serve
