  1. Marinate the chicken
    In a large bowl, combine 2 tablespoons olive oil, lemon juice, garlic, oregano, cumin, salt, and pepper. Add the chicken strips and toss to coat. Cover and refrigerate for at least 15 minutes, or up to 2 hours for more flavor.
  2. Cook the chicken
    Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add the marinated chicken strips and cook for 6-8 minutes, stirring occasionally, until chicken is golden brown and cooked through. Remove from heat and set aside.
  3. Warm the pita bread
    Heat the pita breads in a dry skillet over medium heat for about 30 seconds on each side, or wrap them in foil and warm in a 350°F (175°C) oven for 5 minutes. You can also microwave them wrapped in a damp paper towel for 20-30 seconds.
  4. Prepare the vegetables
    While the chicken is cooking, prepare your vegetables. Dice the cucumber, halve the cherry tomatoes, slice the red onion, and slice the Kalamata olives if they aren't already sliced.
  5. Assemble the wraps
    Spread 2-3 tablespoons of tzatziki sauce on each warmed pita bread. Top with the cooked chicken strips, cucumber, tomatoes, red onion, feta cheese, and olives. Season with additional salt and pepper if desired.
  6. Fold and serve
    Fold the pita over the filling to create a wrap or pocket. If desired, wrap the bottom half in parchment paper or foil to make it easier to eat. Serve immediately while still warm.
