Cook the pastaBring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water to stop the cooking process. Transfer to a large mixing bowl and allow to cool completely.

Prepare the chickenSeason chicken breasts with salt, pepper, and a sprinkle of oregano. Grill or pan-sear over medium-high heat for 5-7 minutes per side until internal temperature reaches 165°F (74°C). Let rest for 5 minutes before dicing into bite-sized pieces.

Make the dressingIn a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, minced garlic, dried oregano, salt, and pepper until well combined and emulsified.

Combine the vegetablesAdd the diced cucumber, halved cherry tomatoes, diced red bell pepper, sliced red onion, and kalamata olives to the bowl with the cooled pasta.

Add chicken and dressingAdd the diced chicken to the pasta mixture. Pour the dressing over the salad and toss gently to coat all ingredients evenly.

Finish with cheese and herbsSprinkle the crumbled feta cheese and chopped fresh parsley over the salad. Toss lightly to incorporate, being careful not to break up the feta too much.
