Creamy Greek giant beans baked in rich tomato sauce

Prepare the beansDrain the soaked beans and place them in a large pot. Cover with fresh water and bring to a boil. Reduce heat and simmer for about 50 minutes until the beans are tender but not mushy. Drain and set aside.

Prepare the sauceIn a large, deep pan, heat 80ml of olive oil over medium heat. Add the onions, carrots, and celery, and sauté for 5-7 minutes until softened. Add the garlic and cook for another minute until fragrant.

Combine ingredientsAdd the chopped tomatoes, tomato paste, oregano, paprika, and cinnamon to the pan. Stir well and simmer for 10 minutes until the sauce thickens slightly. Add the vegetable stock and bring to a gentle boil.

Mix with beansCarefully fold the cooked beans into the tomato sauce, ensuring they're well coated but not breaking them. Season with salt and pepper to taste.

Bake the dishPreheat the oven to 180°C (350°F). Transfer the bean mixture to a large ovenproof dish. Drizzle the remaining olive oil over the top. Bake uncovered for 30-40 minutes until the top is slightly caramelized and the sauce has thickened.

Rest and garnishRemove from the oven and let the dish rest for 10 minutes. Sprinkle with the fresh parsley and dill before serving. The flavors will continue to develop as it cools.
