Prepare the gibletsRinse the giblets thoroughly. Place in a saucepan, cover with water, add a pinch of salt, and simmer for about 30 minutes until tender. Remove from the broth, let cool, then finely chop the heart, gizzard, and liver. Reserve 1 cup of the giblet cooking liquid.

Toast the breadPreheat oven to 350°F (175°C). Spread the bread cubes on a large baking sheet and toast for 10-15 minutes until lightly golden and dry. Transfer to a large mixing bowl.

Sauté the aromaticsIn a large skillet over medium heat, melt the butter. Add the onions and celery, cooking until softened, about 8-10 minutes. Add the garlic and cook for another minute until fragrant. Add the chopped giblets and cook for an additional 2 minutes.

Combine ingredientsPour the vegetable and giblet mixture over the bread cubes. Add the sage, thyme, and rosemary, tossing gently to combine. In a separate bowl, whisk together the eggs, broth, and reserved giblet cooking liquid, then pour over the bread mixture. Add the parsley, salt, and pepper, and gently fold until everything is evenly moistened.

Bake the stuffingTransfer the stuffing to a buttered 9x13-inch baking dish. Cover with aluminum foil and bake at 350°F (175°C) for 30 minutes. Remove the foil and bake for an additional 15 minutes until the top is golden brown and crispy.
