
Oyster Stuffing
A rich and savory coastal twist on traditional Thanksgiving stuffing

Prepare the breadPreheat oven to 350°F (175°C). Spread bread cubes on a baking sheet and toast for 15 minutes until lightly golden and dried out. Transfer to a large mixing bowl and set aside.

Prepare the oystersDrain the oysters, reserving ½ cup of the oyster liquor. Chop the oysters into bite-sized pieces if they're large. Set aside.

Sauté the vegetablesIn a large skillet over medium heat, melt the butter. Add the diced onions and celery, cooking until softened, about 8 minutes. Add the minced garlic and cook for another minute until fragrant.

Combine ingredientsAdd the sautéed vegetables to the bread cubes. Mix in the fresh herbs, chopped oysters, salt, pepper, and cayenne if using. Toss gently to combine.

Add the liquidsIn a separate bowl, whisk together the eggs, chicken stock, white wine, and reserved oyster liquor. Pour this mixture over the bread and vegetable mixture, stirring gently until everything is evenly moistened.

Bake the stuffingButter a 9x13-inch baking dish. Transfer the stuffing mixture to the prepared dish, spreading it evenly. Cover with aluminum foil and bake at 350°F for 30 minutes. Remove the foil and bake for an additional 15 minutes until the top is golden brown and crispy.

Rest and serveAllow the stuffing to rest for 10 minutes before serving. This helps the flavors meld together and makes it easier to portion.
