Instructions

  1. Cook the wild rice
In a large pot, bring the wild rice and broth to a boil. Reduce heat to a simmer, cover, and cook until rice is tender but still chewy, about 45-50 minutes. Drain any excess liquid and set aside.
  2. Prepare the vegetables
While rice is cooking, heat 2 tablespoons olive oil in a large skillet over medium heat. Add onions and celery, cooking until softened, about 5-7 minutes. Add garlic and cook for another 30 seconds until fragrant.
  3. Sauté the mushrooms
In the same skillet, add the remaining tablespoon of olive oil and increase heat to medium-high. Add mushrooms and cook, stirring occasionally, until they release their moisture and begin to brown, about 8-10 minutes. Season with salt and pepper.
  4. Combine ingredients
In a large mixing bowl, combine the cooked wild rice, sautéed vegetables, mushrooms, fresh herbs, dried cranberries, and toasted nuts. Mix thoroughly to incorporate all ingredients evenly.
  5. Prepare for baking
Preheat oven to 350°F (175°C). Butter a 9x13 inch baking dish. Transfer the stuffing mixture to the prepared dish and drizzle with melted butter. Cover with aluminum foil.
  6. Bake the stuffing
Bake covered for 20 minutes. Remove foil and continue baking for another 15-20 minutes until the top is lightly browned and crisp. Allow to rest for 10 minutes before serving.
